Tomato Bean Soup

Ok, here’s a yummy one for a cold, winter’s-definitely-coming kind of day:

3 cups chicken stock

1 28 oz can of diced tomatoes

1 can white navy beans

2 cloves garlic

2 tbsp olive oil

1/4 cup chopped fresh basil

1/2 cup cream

1/4 cup parmesan cheese

cooked shell macaroni (optional)

 

Mince garlic and saute in olive oil over low heat for one minute.  Add stock and tomatoes with juice.  Bring to boil, then reduce heat to medium.  Add basil.  Blend with immersion blender until smooth.  Add beans, cream and parmesan cheese and stir.  Simmer for 10 minutes.  Add cooked macaroni.  Enjoy.  (Kathy)
